Spanish Roja is a highly vigorous grower, capable of reaching up to 4 feet in height, but it requires a solid winter cold spell (vernalization) to form its largest, most uniform bulbs. Each bulb yields 6 to 11 large, plump, brownish-red cloves encased in loose, brittle skins that make them exceptionally easy to peel in the kitchen.
